Rosh Hashanah Honey Cake

In honor of the Jewish New Year, we are sharing a past MacKid Publisher Mom Gina's recipe for Honey Cake. It is Jewish tradition to eat apples dipped in honey, as well as honey cake, for a sweet new year. This recipe was passed down from Gina's Mom and is a very special recipe so enjoy! 

Honey Cake

Ingredients:

  • 1/1/4 cups brown sugar
  • 1 cup honey warm
  • 4 eggs
  • 3/4 cup oil
  • 3 cups of flour
  • 1 cup chopped pecans
  • 2 t baking powder
  • 1 t cinnamon
  • 1 t Allspice
  • 1 t baking soda dissolved in 1 cup strong coffee

Directions:
Mix together brown sugar and honey, add the eggs one at a time, beating well after each addition. Add oil and mix . Sift toghether the dry ingrdiants and add to batter along with coffee. Bake in 325 oven for one hour.
