So easy, all natural, AND DELICIOUS!
I’m already having a hard time finding pureed pumpkin in my local supermarket. I wanted to grab some up and make these cookies before I got completely overwhelmed with pumpkin everything. (It’s happening fast though. I love this time of year!!)
Ingredients:
1 ½ cup pumpkin
2 cups rolled oats
1 egg
1/4 tsp Vanilla Extract
3 tbsp agave nectar
2 ½ tbsp cinnamon
¼ tsp nutmeg
Pinch of sea salt
Pinch of Cayenne Pepper
½ cup craisins
½ cup chopped walnuts
Directions:
Preheat oven to 350.
Mix all ingredients, except oats, craisins, and walnuts, in big bowl.
Fold in oats, craisins, and walnuts.
Scoop heaping teaspoons onto greased baking sheet.
Bake 20 minutes, let cool on wire rack
Yields: about 20 cookies
