Russell's Infamous Pineapple Boats

Ok, it's officially BBQ season for most families. However, in our family, it is BBQ season all year long! My husband, Russell, is the biggest BBQ geek ever! He will BBQ in pouring rain, snowstorms, and tornadoes. Of course, he drags all the bad weather back into our house. But, in his defense, he does also bring in the MOST delicious cheeseburgers on the planet. I think our Weber BBQ is officially the 6th member of our family. He treats it like a baby--never in my life have I seen anyone take 4 hours to so lovingly clean a BBQ. Plus, he has Weber's Customer Service on our Speed Dial at home. For a while, I thought he was leaving me for Josephine at Weber who would email him weekly recipes. Lucky you, he even agreed to give out one of his favorite recipes. Here it is...

Rum Pineapple Boats

Use Indirect/Medium Heat


--1 pineapple

--1/3 cup melted butter

--1/4 cup packed light brown sugar

--3 tablespoons dark rum

--1/2 teaspoon ground cinnamon

--1/8 teaspoon ground cloves

--1/4 teaspoon ground nutmeg

Cut pineapple through top and core into quarters. Cut pineapple into 1/2 inch slices, cutting to, but not through, the shell. In a small saucepan, melt butter. Stir in sugar, rum, cinnamon, and cloves.

Wrap pineapple tops in heavy foil. Place pineapple quarters, shell side down, on the cooking grate. Grill until pineapple is heated through, about 15 minutes, basting with butter-rum mixture. Just before serving, remove foil from tops and sprinkle each serving with nutmeg. Makes 4 servings.
