Memorial Day Cook-out Recipes

Having a cook-out this weekend? Here are a few delicious recipes to get your mouth's watering!

Espresso Rub BBQ Burger

Ingredients:

  • 1 lb. ground beef
  • 1 tsp. espresso powder or instant ground coffee
  • 1/2 tsp. black pepper
  • 3 tbl. hickory brown sugar bbq sauce
  • 4 slices colby-jack cheese
  • buns, lettuce, tomato, onion to taste

Directions:

Mix ground beef with espresso powder and black pepper. Form into 4 patties. Grill patties until desired pinkness and later in bbq sauce. Top with cheese, melt and serve on bun with toppings.

Turkey Burger with Feta Cheese

Ingredients:

  • 1 lb. ground turkey
  • 1 cup feta cheese crumbles
  • 1/2 cup kalamata olives, sliced
  • 2 tsp. oregano
  • 1/2 tsp. black pepper

Directions:

Mix all ingredients together in bowl and form into 4 patties. Grill until desired pinkness and top with lettuce, tomato and onion.

Chipotle Guacamole

Ingredients:

  • 2 avocados, peeled and diced
  • 1 tbl. lime juice
  • 2 tbl. sour cream
  • 1/2 cup medium salsa
  • 1/4 tsp. adobo sauce from canned chilis

Directions:

Mix all ingredients until desired texture. Refrigerate until served.

Grilled Fruit Kabobs

Ingredients:

  • 3 fresh peaches, cut into cubes
  • 3 fresh plums, cut into cubes
  • 3 bananas, sliced into 4 chunks each
  • 15 large strawberries, halved
  • 1 pineapple, cut into 1 inch cubes
  • 3/4 cup butter
  • 1/3 cup honey
  • long sheet of aluminum foil

Directions:

Cut fruit as directed. Mix butter and honey in small pan and melt together over medium heat. Reduce heat a heat for 3-5 mins until slightly thickened. Don't boil!

Place 1 of each fruit on a skewer and lay on aluminum sheet on medium heat grill. Brush the butter/honey mixture evenly over each skewer. Grill on each side for 5 mins or until fruit has softened.
