April Fool's Day Meatloaf Cake

2 lb ground turkey
1 cup ricotta cheese
1/2 cup bread crumbs
1/2 cup grated carrots
1 tbsp ketchup
1 tsp mustard
1/8 tsp ground pepper
1 tsp garlic powder
1/2 tsp onion powder


2 lbs potatoes, peeled & chopped
1/4 cup fat free Greek yogurt
salt & pepper
food coloring, optional

Directions
Preheat oven to 350 degrees and spray an 8 inch or 9 inch round/square baking dish with cooking spray. In a large bowl combine first nine ingredients until thoroughly mixed. Scoop mixture into the baking dish and spread to meet the edges. Bake in oven for 45 minutes.

While meatloaf is baking, bring a pot of cold water with the cut, peeled potatoes to a boil. Reduce heat slightly and cook until potatoes are soft, approximately 15 minutes. Drain and return potatoes to the pot. Add yogurt, salt & pepper to taste and mash with an electric mixture. The potatoes should be smooth but be careful to not over-mix otherwise you will get a starchy glue. If using food coloring, add 3 to 4 drops and stir in to mashed potatoes.

Once meatloaf is cooked, remove from oven and use a knife to go around the edges to separate from the baking dish. Allow to sit for 10 minutes. Using a plate on top of the baking dish, invert the dish so the meatloaf comes out. Place the meatloaf right side up on a clean plate. Allow to cool another 10 minutes and then "ice" with the mashed potatoes as you would a cake.

Keep a straight face and serve your family their "cake" for dinner.
