Veggie Pancakes

My daughter loves her vegetables (yay!) but we're still always looking for new ways to give them to her.  She prefers raw, which is good, but we still like to mix things up.  We found this cool idea and made it our own.  We hope you like!

What you need:

1/2 Cup Flour

1/4 tsp garlic salt

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp pepper

1/2 Cup grated zucchini

1/2 Cup chopped yellow pepper

1/2 Cup grated carrots

1/2 Chopped Green Onion (or sweet onion)

1/4 Cup 2% Milk

1 egg

Cooking Spray (the original recipe called for Olive Oil but we like spray, feel free to use whichever you like)

What To Do:

1. Mix powder/dry ingredients in bowl: salts, flour, baking powder and pepper

2. In another bowl, mix the milk and egg then add the veggies

3. Mix powder mixture and veggie mixture together (if the batter is too thick, add some milk in very small amounts until the right consistency... if too thin, do the same with flour and adjust seasonings)

4. Spray the pan and heat, add the mix just like you would with pancake batter, making them as small or as large as you like.

5. Serve with your meal of choice.  :)  We made this a side with my Mom's baked chicken.  Mmmmm!
