Patriotic Marshmallow Fruit Sparklers

By Anna Hall, Hickory, NC Publisher Mom June 26, 2015
These red, white and blue skewers are healthy and cute for Fourth of July festivities. They are simple to put together and kids can help with assembly. This fun snack will be a hit with the young and the old!
Ingredients:
  • 1 pint stawberries, hulled, washed and dried *Note: you can also use cherries or red grapes for the red color; or for the extra touch, use a cookie cutter to cut star shapes out of watermelon*
  • 1 pint blueberries, washed and dried
  • marshmallows: mini or star-mallows *Note: I have also seen banana slices or pound cake cut into a star shape for the white instead of marshmallows*
  • wooden skewers
We couldn't find the star-mallows at the store, but I know Kraft makes them. Instead, we used regular marshmallows that we rolled out with a rolling pin on a piece of wax paper and cut with a small, star-shaped cookie cutter. The marshmallows get a little sticky being rolled out like that, so we dusted with powdered sugar.

To make the fruit skewers, thread the strawberries, blueberries and marshmallows in whatever pattern you'd like. I made them all mixed up but have seen them all made in one pattern (red strawberry on top, white marshmallows in the middle and blue blueberries at the bottom) and they turn out cute that way too.

Have fun and enjoy!
